Buffalo Chicken Meal Prep Bowls - inspired by Tieghan Gerard from Half Baked Harvest! These are super easy to make and are even better the next day.
Serves 4
Total time: 45 minutes
You will need:
2 large broccoli crowns, cut into florets
1-1.5 lbs chicken breast, cut into cubes
1 Tbsp paprika
1 tsp onion powder
1 tsp garlic powder
Salt and pepper
¼ cup all-purpose flour
1-2 Tbsp olive oil
½ cup Frank’s Red Hot Buffalo sauce
2 Tbsp butter
2 Tbsp honey
Large dishwasher safe bowl
Knife
Cutting board
Sheet pan
Aluminum foil
Measuring cups and spoons
Small saucepan
Directions:
Preheat the oven to 400° F. Line a baking sheet with foil.
In a large bowl, toss together the diced chicken, paprika, onion powder, garlic powder, salt, and pepper. Add the flour and toss again. Add 2 tablespoons olive oil, tossing to coat. Bake 15-20 minutes.
Meanwhile, make the sauce. In a small saucepan, melt together the buffalo sauce and butter. Remove from the heat and mix in the honey.
Take the sheet pan out of the oven, pour and toss the chicken in the sauce. Put back in the oven and bake another 5-10 minutes until the buffalo sauce is baked onto the chicken.
Assemble your meal prep: I served my chicken and broccoli with Ben’s Original long grain white rice for a balanced meal! Store these in airtight containers for up to 4 days.
