Classic chili with a surprise ingredient...
Chili is one of those dishes that everyone has a different way of making – here's mine!
I love a bean-heavy chili, because beans are a great source of soluble fiber and micronutrients!
I used to never have chili without some sour cream. I started using Greek yogurt instead to add some extra protein and probiotics!
You will need:
1.5-2 lbs lean ground beef or turkey (or both!)
2 bell peppers, any color, diced
1 medium yellow onion diced
2 cloves garlic, minced
1 chili seasoning packet
1 10 oz can diced tomatoes with green chiles
1 4 oz can tomato sauce
1 12 oz beer (optional - use an extra can of tomato sauce if not using)
1 can kidney beans, drained
1 can black beans, drained
Directions:
In a large pot, cook the beef with the onions and bell peppers until the meat is browned and the vegetables are soft. Add garlic, diced tomatoes with green chiles, tomato sauce, beer if using, and chili seasoning. Stir well. Turn heat down to low, cover, and simmer for 30 minutes. Add beans and simmer for 15 more minutes.
Serve with all of your favorite toppings! I used diced onions, green onion, Greek yogurt (instead of sour cream), and cornbread.
Make it a balanced meal with a salad appetizer.
