Pesto Pasta with Ground Turkey


15 minute dinner, coming right up!


This is the perfect dinner to make when you're in a pinch - and it's super high protein and high fiber too!


I like to use Banza chickpea pasta for some extra protein and fiber, but it's not mandatory.


You can also use shredded chicken instead of ground turkey!


You will need:

1 Tbsp olive oil

1 lb ground turkey

1-5 oz package baby spinach

1-8oz box chickpea pasta shells

1/2 jar pesto

1 crown broccoli, cut into florets (or 1-12oz bag broccoli florets)


Directions:

Preheat oven to 350 degrees. Place broccoli on a lined, greased baking sheet and bake for 20-25 minutes.

Cook pasta according to package directions.

In a medium skillet, heat olive oil and add ground turkey. Cook until browned, then add spinach and allow to wilt.

Once the pasta is done, drain and rinse, then return to the pot. Stir in 1/2 jar of pesto. Add the turkey and spinach to the pot and combine. Serve with roasted broccoli on the side for a balanced meal!
