Simple Meatloaf

I hope you like leftovers!


Meatloaf is the classic dinner that goes a long way. This is a great meal for kids and families because it's easy, makes a ton, and is loved by kids and adults alike.


I love this mealoaf recipe because it is so versatile! I like to add diced onions and peppers, but you can customize the base recipe however you wish.


Pair with mashed potatoes and a green veggie and you have a comforting, balanced winter meal.


You will need:

1-1.5 lbs ground turkey or 90% lean ground beef

1 cup milk of choice

1 cup breadcrumbs

1 egg

salt and pepper


*Optional add-ins:

1/2 cup diced yellow onion

1/2 cup diced bell pepper

1 tsp dried thyme

1 tsp garlic powder


Directions:

Add all ingredients in a large bowl and combine until uniform.

Transfer to 1 or 2 greased loaf pans.

Bake in a 350 degree oven for 45 minutes to 1 hour, until internal temperature reaches 165 degrees F.


*Other customization ideas:

Buffalo Meatloaf: add buffalo sauce in place of 1/4 cup of the milk


Ketchup Meatloaf: add canned tomato sauce in place of 1/4 cup of the milk and top loaves with ketchup before baking for a sweet ketchup roasted top


Veggie Meatloaf: add other veggies, like diced shallot, shredded zucchini, chopped green onion, or mushrooms for a fiber-filled twist
