Sweet Potato & Spinach Quiche

Breakfast meal prep, coming right up!


A high protein breakfast doesn't always have to include a protein supplement. Try this quiche for an extra hearty, fiber filled breakfast that will keep your energy levels steady until lunch.


Sweet potatoes and spinach: soluble and insoluble fiber

Eggs and sausage: protein

Feta cheese and eggs: healthy fat

You will need:

1 Tbsp olive oil

1 lb turkey sausage

5 oz spinach

1 medium sweet potato, cubed and roasted with cinnamon*

2 oz feta cheese crumbles

10 eggs

1/4 cup milk

salt and pepper


Directions:

Roasted sweet potatoes:

Cut sweet potatoes into cubes. Cover with olive oil, salt, pepper, and cinnamon. Roast in a 400 degree oven for ~30 minutes or until they can be easily pierced with a fork.

For the quiche:

Preheat oven to 350 and grease a pie dish.

Heat olive oil in a large skillet over medium heat. Cook sausage until browned. Add the spinach and allow to wilt.

Add sausage and spinach mixture and roasted sweet potatoes to the pie dish.

In a separate bowl, whisk eggs and milk.

Add the egg mixture and half of the feta cheese to the pie dish and stir.

Top with the rest of the feta.

Bake for 35-40 minutes or until eggs are set.


Make it vegetarian/vegan: Use vegetarian mince or vegetarian breakfast sausage instead of turkey sausage. Omit the feta cheese or use a vegan cheese. Use almond or soy milk instead of cow's milk.


For leftovers, keep refrigerated in an airtight container for up to 4 days.
